This salad is like summer in a bowl! It is a great way to enjoy the sweetness of peaches with a healthy dose of greens. The fresh mint is what really makes it!
Arugula Salad with Peach, Radish, Mint, and Pesto

This easy summer salad is delish and full of fresh flavor- the peaches are good either fresh or grilled so feel free to do them either way! Serves 2.

Ingredients

8 oz fresh baby arugula, washed

2 large fresh peaches, washed and sliced

2 tbsp pine nuts

4 fresh radishes, washed and sliced

2 tbsp fresh vegan pesto (we like gotham farms)

2 sprigs fresh mint, stems removed and washed
Directions
Wash arugula and split between two large bowls
Wash and slice peach. If you prefer it grilled, warm a grill pan over med-high heat with a spray of a neutral oil like avocado or coconut. Add peach slices and grill undisturbed for 3 min to get nice marks. Flip and cook another 2 min. Remove and cool then add to arugula
In warm pan add pine nuts and toast lightly 2-3 min. Remove and cool then add to salad
Wash and slice radishes, add to salad
Wash and de-stem mint. Chiffonade and sprinkle over each salad.
Drizzle 1 scant tbsp of pesto over each salad. Add salt and pepper to taste and toss to coat!
Serve with grilled chicken or fish for a beautiful summer meal!
