Ingredients

2 beaten eggs

1 large onion, skin removed and cut into rings and separated

1 cup almond flour

1 teaspoon cayenne pepper

1/2 teaspoon garlic powder
-
½ tsp each salt and pepper
-
avocado oil spray
-
1 cup raw cashews
-
1/2 cup fresh cilantro
-
1 clove garlic
-
1/2 cup warm water
-
juice of ½ lime
-
½ avocado
-
1/2 teaspoon salt
-
½ seeded fresh jalapeno (if desired)

Cover cashews with boiling water and let soak 1 hour until softened. Drain
Combine cashews and all remaining ingredients except water in a high speed blender, slowly adding water until ingredients reach a creamy consistency (may need more or less than ½ cup).
Refrigerate up to 5 days and serve with crudites, air fried veggies or even thin out and use as a dressing!
Onion Rings
Make a breading station by beating eggs in a shallow bowl, then mixing all remaining ingredients in an adjacent bowl. Because ingredients can become clumpy during breading, it helps to divide the batch in two and swap out breading mixture midway through.
Dip the rings into the egg letting the excess fall off before dredging in the breading mixture and coating thoroughly.
Spray onion rings with avocado oil and air fry at 375 degrees F for 7 to 9 minutes on until golden brown.
Serve with cilantro lime dip or your favorite sugar free ketchup!
