RECIPE: Chickpea Panisse

I recently had dinner out with a friend at a great restaurant in Montclair, NJ called Faubourg.  My friend is in the restaurant industry and knew the owner, who was gracious enough to comp us a few items we hadn't ordered. One of the items I had never heard of- chickpea panisse. 

Panisse is a chickpea fritter which originates in the south of France. At first bite it tasted like an over-the-top cheesy decadent treat.  It is similar in consistency to a polenta fry- a crunchy exterior and creamy interior.  Turns out it is just chickpea flour, water, olive oil and salt!  So easy to make and tastes incredible. Nothing like plant-based comfort food!

This is perfect for our vegan or vegetarian clients.  Approved for clients on the ADAPT and LIVE phases of our plans, but watch your portion size, as these do go down easy!  Bon Appetit!
