Let's be honest, we are all about quick and easy meals these busy summer days - no one wants to be slaving away in the kitchen! This paleo lemon salmon is an easy meal that comes together in minutes but tastes amazing. Serve over cauliflower rice for a quick, filling and balanced meal. It's loaded with Omega 3s fatty acids, protein and a crisp lemon flavor! And, of course, it is gluten-free, dairy free and paleo and keto friendly!
4 wild caught salmon filets (serving size is 4 oz but most filets are 6-8 oz- you can always divide!)
4 tbsp avocado oil
4 cloves minced garlic
sea salt and fresh cracked pepper to taste
1/4 organic chicken stock
1/4 c fresh lemon juice
Directions
Allow salmon to rest out of refrigeration for 15-20 min. Meanwhile, make the lemon sauce.
LEMON SAUCE: Heat 2 tbsp olive oil or avocado oil over medium heat. Add minced garlic and sautée until fragrant but garlic is not browned.
Add lemon juice and chicken stock. Stir.
Reduce heat to medium- low and allow to simmer until reduced by half and thickened. Set aside
SALMON FILETS: In a pan over high heat, heat 2 tbsp avocado oil until shimmering. Sear salmon, first skin side up for 4 min. Flip and sear skin side down for 4 min.
Remove salmon from heat and drizzle lemon sauce over top. Best served over a cauliflower rice seasoned with garlic and EVOO.
